What does yuri mean?
Yuri refers to a Japanese storytelling genre that depicts romantic, sexual, or occasionally platonic relationships between two women. While often associated with Japanese anime or manga, yuri (sometimes capitalized Yuri) has since come to refer to lesbian media (such as in TV shows, movies, or literature) from any part of the world.
Examples of yuri
Sasamekikoto (“The thing that is whispered”) is a Yuri love comedy of errors about girls who love girls.... even the ones who don’t love them back.

Where does yuri come from?
In Japanese the word yuri means “lily,” and is a popular first name. The lily flower itself is also a symbol for queerness in many cultures. The publication of the 2003 manga Yuri Shimai established yuri as its own distinct genre, and the subsequent Comic Yuri Hime in 2005 popularized the term in fan culture.
How is yuri used?
Although a noun, in typical use yuri functions similarly to an adjective and has become synonymous with queer ("characterized by sexual or romantic attraction to members of one’s own sex").
On top of that, in a sea of yuri bait anime, it’s nice to see an actual canon relationship between girls in an action-packed anime.

Yuri is also commonly used by fandom communities for such queer relationships, especially in phrases like “doomed yuri” and “toxic yuri.”
